Description

Halawet el Jibn is a traditional Syrian dessert made with semolina, cheese, and flavored with rose water, offering a delightful taste and texture.


Ingredients

  • 2 cups fine semolina
  • 1 cup sugar
  • 2 cups water
  • 1 cup milk
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon vanilla extract
  • 1 tablespoon rose water (optional)
  • 1/2 cup unsalted butter
  • 1/2 cup crushed pistachios (for garnish)
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. In a medium saucepan, combine the water and sugar. Heat over medium heat until the sugar dissolves completely. Remove from heat and let it cool slightly.
  2. In another saucepan, melt the butter over medium heat. Add the semolina and stir continuously for about 5 minutes until it turns golden brown.
  3. Gradually add the milk to the semolina mixture, stirring constantly to avoid lumps. Cook for another 5 minutes until the mixture thickens.
  4. Add the shredded mozzarella cheese, vanilla extract, and rose water (if using) to the semolina mixture. Stir until the cheese melts and the mixture becomes smooth and stretchy.
  5. Transfer the mixture to a greased surface or a large plate. Let it cool slightly, then knead it gently until smooth.
  6. Divide the dough into small portions and shape them into thin rectangles or squares. Place a small amount of crushed pistachios in the center of each piece and roll them up.
  7. Arrange the rolled pieces on a serving platter. Dust with powdered sugar and sprinkle with additional crushed pistachios before serving.

Notes

  • For a different flavor, try adding a tablespoon of orange blossom water instead of rose water.
  • You can substitute the mozzarella cheese with a mix of ricotta and cream cheese for a creamier texture.
