- 2 whole chicken thighs (bone-in, skin-on, about 1.5 pounds)
- 1 tablespoon salt
- 1 tablespoon sesame oil
- 4 cups chicken broth
- 2 cups jasmine rice
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon vegetable oil
- 1 cucumber, sliced
- 3 green onions, chopped
- Soy sauce, for serving
- Chili sauce, for serving
Instructions
- Begin by preparing the chicken. Rub the chicken thighs with salt and let them sit for about 15 minutes.
- In a large pot, bring the chicken broth to a boil. Carefully add the chicken thighs to the pot. Reduce the heat and simmer for about 30 minutes, or until the chicken is fully cooked. Remove the chicken and let it cool slightly. Reserve the broth for later.
- Once the chicken is cool enough to handle, rub the skin with sesame oil and set aside.
- In a separate pot, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant, about 1-2 minutes.
- Add the jasmine rice to the pot and stir to coat the grains with the oil. Pour in 4 cups of the reserved chicken broth (or enough to cover the rice) and bring to a boil. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- While the rice is cooking, prepare the cucumber and green onions for garnish.
- Once the rice is done, fluff it with a fork. Slice the chicken thighs and serve them over the rice, garnished with cucumber slices and chopped green onions.
- Drizzle soy sauce and chili sauce over the chicken and rice before serving.
Notes
- For a richer flavor, consider adding a few pandan leaves to the broth while cooking the chicken.
- You can substitute the chicken thighs with boneless, skinless chicken breasts if you prefer a leaner option. Adjust cooking time accordingly to avoid drying out the meat.
