- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol (or your preferred sweetener)
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened almond milk
- 1 tablespoon melted coconut oil
- 1/4 cup sugar-free chocolate chips (optional)
Instructions
- Preheat your waffle maker according to the manufacturer’s instructions.
- In a large mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, cinnamon, and salt. Mix well.
- In a separate bowl, whisk together the eggs, vanilla extract, almond milk, and melted coconut oil until smooth.
- Pour the wet ingredients into the dry ingredients and stir until fully combined. If using, gently fold in the chocolate chips.
- Spray the waffle maker with non-stick cooking spray. Pour about 1/4 cup of the batter into the center of the waffle maker and close the lid. Cook for about 3-5 minutes, or until the chaffle is golden brown and cooked through.
- Carefully remove the chaffle and repeat with the remaining batter.
- Serve warm, optionally dusted with powdered erythritol or drizzled with sugar-free syrup.
Notes
- For a pumpkin spice version, substitute 1/4 cup of the almond flour with pumpkin puree and add 1/2 teaspoon of pumpkin pie spice.
- Add a tablespoon of peanut butter or almond butter to the batter for a nutty flavor and extra creaminess.
