Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol (or your preferred sweetener)
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened almond milk
  • 1 tablespoon melted coconut oil
  • 1/4 cup sugar-free chocolate chips (optional)

Instructions

  1. Preheat your waffle maker according to the manufacturer’s instructions.
  2. In a large mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, cinnamon, and salt. Mix well.
  3. In a separate bowl, whisk together the eggs, vanilla extract, almond milk, and melted coconut oil until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until fully combined. If using, gently fold in the chocolate chips.
  5. Spray the waffle maker with non-stick cooking spray. Pour about 1/4 cup of the batter into the center of the waffle maker and close the lid. Cook for about 3-5 minutes, or until the chaffle is golden brown and cooked through.
  6. Carefully remove the chaffle and repeat with the remaining batter.
  7. Serve warm, optionally dusted with powdered erythritol or drizzled with sugar-free syrup.

Notes

  • For a pumpkin spice version, substitute 1/4 cup of the almond flour with pumpkin puree and add 1/2 teaspoon of pumpkin pie spice.
  • Add a tablespoon of peanut butter or almond butter to the batter for a nutty flavor and extra creaminess.
