- 1 pound fresh green beans, trimmed
- 1/4 cup sliced almonds
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Zest of 1 lemon (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until bright green and tender-crisp. Drain and immediately plunge the beans into a bowl of ice water to stop the cooking process. Drain again and set aside.
- In a large skillet over medium heat, melt the butter. Add the sliced almonds and toast for about 2-3 minutes, stirring frequently, until golden brown.
- Add the minced garlic to the skillet and sauté for an additional 30 seconds until fragrant.
- Add the blanched green beans to the skillet and toss to coat in the butter and almond mixture. Cook for 2-3 minutes until heated through.
- Remove from heat and stir in the lemon juice, salt, and pepper to taste. If desired, add lemon zest for extra flavor.
- Serve immediately as a side dish.
Notes
- For added flavor, consider incorporating a pinch of red pepper flakes for a bit of heat.
- You can substitute the almonds with walnuts or pecans for a different nutty flavor.
