Description

A delicious and savory dish featuring chicken breasts stuffed with a creamy goat cheese and basil filling, perfect for a special dinner.

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts
  • 4 ounces goat cheese, softened
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar (for drizzling)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.
  3. In a medium bowl, combine the goat cheese, chopped basil, sun-dried tomatoes, garlic powder, salt, and black pepper. Mix until well combined.
  4. Spread an equal amount of the goat cheese mixture onto each chicken breast, leaving a small border around the edges.
  5. Roll each chicken breast tightly from one end to the other, securing the filling inside. Use toothpicks to hold the ends closed if necessary.
  6. Dredge each chicken roll in flour, shaking off the excess. Dip into the beaten egg, then coat with breadcrumbs, pressing gently to adhere.
  7. Heat olive oil in a large oven-safe skillet over medium heat. Add the stuffed chicken rolls and cook for 3-4 minutes on each side, or until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  9. Remove from the oven, drizzle with balsamic vinegar, and let rest for 5 minutes before slicing.

Notes

  • For a spicier kick, add crushed red pepper flakes to the goat cheese mixture.
  • Substitute the goat cheese with feta or cream cheese for a different flavor profile.
