  • 1 cup almond flour

  • 1/4 teaspoon nutmeg (optional)
  • 1 tablespoon olive oil (for cooking)

Instructions

  1. In a large mixing bowl, combine the ricotta cheese, egg, almond flour, Parmesan cheese, salt, black pepper, garlic powder, and nutmeg (if using). Mix until a soft dough forms.
  2. Lightly flour a clean surface with almond flour. Divide the dough into four equal portions. Roll each portion into a long rope, about 1/2 inch thick.
  3. Cut the ropes into 1-inch pieces to form the gnocchi. Use a fork to gently press down on each piece to create ridges, which will help hold the sauce.
  4. Bring a large pot of salted water to a gentle boil. Carefully drop the gnocchi into the water in batches. Cook until they float to the surface, about 2-3 minutes.
