Ingredients

  • 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup erythritol (or preferred sweetener)
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened almond butter
  • 1/4 cup unsweetened coconut flakes
  • 1/4 cup sugar-free maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons water (if needed for consistency)

Instructions

  1. In a large mixing bowl, combine the almond flour, vanilla protein powder, erythritol, ginger, cinnamon, nutmeg, cloves, and salt. Mix well until all dry ingredients are evenly distributed.
  2. Add the almond butter, coconut flakes, sugar-free maple syrup, and vanilla extract to the dry mixture. Stir until fully combined. If the mixture is too dry, add water one tablespoon at a time until it reaches a dough-like consistency.
  3. Once the mixture is well combined, use your hands to roll it into small balls, about 1 inch in diameter.
  4. Place the balls on a parchment-lined baking sheet or plate.
  5. Refrigerate for at least 30 minutes to firm up before serving.
  6. Store any leftovers in an airtight container in the refrigerator for up to one week.
