A quick and flavorful dish featuring shrimp and asparagus in a garlic butter sauce.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 pound asparagus, trimmed and cut into 2-inch pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste
  • 1 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, melt 2 tablespoons of butter over medium heat.
  2. Add the minced garlic and red pepper flakes (if using) to the skillet. Sauté for about 1 minute until fragrant.
  3. Add the asparagus to the skillet and season with salt and pepper. Cook for 3-4 minutes, stirring occasionally, until the asparagus is tender-crisp.
  4. Push the asparagus to one side of the skillet and add the remaining 2 tablespoons of butter. Once melted, add the shrimp to the skillet. Season the shrimp with salt and pepper.
  5. Cook the shrimp for 2-3 minutes on each side, or until they turn pink and opaque.
  6. Stir in the lemon zest and lemon juice, mixing everything together. Cook for an additional minute to combine the flavors.
  7. Remove from heat and garnish with chopped parsley before serving.

Notes

  • For a low-carb option, serve over cauliflower rice instead of traditional rice.
