A quick and flavorful dish featuring shrimp and asparagus in a garlic butter sauce.

- 1 pound large shrimp, peeled and deveined
- 1 pound asparagus, trimmed and cut into 2-inch pieces
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- Salt and pepper to taste
- 1 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, melt 2 tablespoons of butter over medium heat.
- Add the minced garlic and red pepper flakes (if using) to the skillet. Sauté for about 1 minute until fragrant.
- Add the asparagus to the skillet and season with salt and pepper. Cook for 3-4 minutes, stirring occasionally, until the asparagus is tender-crisp.
- Push the asparagus to one side of the skillet and add the remaining 2 tablespoons of butter. Once melted, add the shrimp to the skillet. Season the shrimp with salt and pepper.
- Cook the shrimp for 2-3 minutes on each side, or until they turn pink and opaque.
- Stir in the lemon zest and lemon juice, mixing everything together. Cook for an additional minute to combine the flavors.
- Remove from heat and garnish with chopped parsley before serving.
Notes
- For a low-carb option, serve over cauliflower rice instead of traditional rice.
- Add cherry tomatoes or bell peppers for extra color and flavor.
