- 2 pounds baby potatoes, halved
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes, or until fork-tender. Drain and set aside.
- In a large mixing bowl, melt the butter in the microwave or on the stovetop. Stir in the minced garlic, thyme, rosemary, salt, and pepper.
- Add the drained potatoes to the bowl and toss until they are well coated with the garlic butter mixture.
- Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, flipping them halfway through for even cooking.
- Remove from the oven and sprinkle with fresh parsley before serving.
Notes
- For extra flavor, add a pinch of red pepper flakes to the garlic butter mixture for a spicy kick.
- Substitute baby potatoes with sweet potatoes for a different taste and added nutrition.
