- 1 cup powdered sugar
- 1/2 cup creamy peanut butter
- 1/2 teaspoon peppermint extract
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a large mixing bowl, beat the softened butter and powdered sugar together until smooth and creamy.
- Add the creamy peanut butter, peppermint extract, and salt, mixing until well combined.
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- Spread the butter mixture evenly into the prepared dish, smoothing the top with a spatula.
- Freeze for about 30 minutes, or until firm.
- While the butter layer is chilling, melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Once the butter layer is firm, pour the melted chocolate over the top and spread it evenly.
- Return to the freezer for another 30 minutes or until the chocolate is set.
- When ready to serve, lift the squares out of the dish using the parchment paper overhang.
- Cut into small squares and enjoy!
