Discover this delightful dessert recipe for Floating Island, a light and airy treat perfect for any occasion.


Ingredients

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 cup slivered almonds (optional, for garnish)
  • 1/4 cup caramel sauce (store-bought or homemade)

Instructions

  1. In a medium saucepan, heat the milk, 1/4 cup of sugar, and vanilla extract over medium heat until it just begins to simmer. Remove from heat and set aside.
  2. In a large mixing bowl, beat the egg whites and cream of tartar with an electric mixer on medium speed until soft peaks form.
  3. Gradually add the remaining 1/4 cup of sugar and continue beating until stiff peaks form.
  4. Using a large spoon, drop spoonfuls of the beaten egg whites into the warm milk. Poach the meringue clouds for about 2-3 minutes on each side.
  5. Carefully remove the meringue clouds with a slotted spoon and place them on a plate to cool.
  6. Once all meringue clouds are poached, divide the warm milk mixture into serving bowls.
  7. Place the meringue clouds on top of the milk, drizzle with caramel sauce, and sprinkle with slivered almonds if desired.
  8. Chill the floating islands in the refrigerator for at least 30 minutes before serving.

Notes

  • For a chocolate twist, add 2 tablespoons of cocoa powder to the milk while heating.
  • For a fruity variation, top with fresh berries instead of almonds.
