- 2 cups whole milk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large egg whites
- 1/4 teaspoon cream of tartar
- 1/4 cup slivered almonds (optional, for garnish)
- 1/4 cup caramel sauce (store-bought or homemade)
Instructions
- In a medium saucepan, heat the milk, 1/4 cup of sugar, and vanilla extract over medium heat until it just begins to simmer. Remove from heat and set aside.
- In a large mixing bowl, beat the egg whites and cream of tartar with an electric mixer on medium speed until soft peaks form.
- Gradually add the remaining 1/4 cup of sugar and continue beating until stiff peaks form.
- Using a large spoon, drop spoonfuls of the beaten egg whites into the warm milk. Poach the meringue clouds for about 2-3 minutes on each side.
- Carefully remove the meringue clouds with a slotted spoon and place them on a plate to cool.
- Once all meringue clouds are poached, divide the warm milk mixture into serving bowls.
- Place the meringue clouds on top of the milk, drizzle with caramel sauce, and sprinkle with slivered almonds if desired.
- Chill the floating islands in the refrigerator for at least 30 minutes before serving.
Notes
- For a chocolate twist, add 2 tablespoons of cocoa powder to the milk while heating.
- For a fruity variation, top with fresh berries instead of almonds.
