Description

Feijoada (Brazil) is a must-try hearty dish!


Ingredients

  • 2 cups black beans, soaked overnight and drained
  • 1 pound pork shoulder, cut into 1-inch cubes
  • 1/2 pound smoked sausage, sliced
  • 1/2 pound chorizo, sliced
  • 1/2 pound beef brisket, cut into 1-inch cubes
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 6 cups chicken broth
  • Salt to taste
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Cooked white rice (for serving)
  • Orange slices (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat a little oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
  2. Add the pork shoulder, beef brisket, smoked sausage, and chorizo to the pot. Cook for about 5-7 minutes until the meats are browned on all sides.
  3. Stir in the soaked black beans, bay leaf, cumin, paprika, black pepper, and cayenne pepper if using.
  4. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 2-3 hours, or until the beans are tender and the meats are cooked through. Stir occasionally and add more broth or water if needed.
  5. Once cooked, remove the bay leaf and season with salt to taste.
  6. Serve the feijoada hot over cooked white rice, garnished with fresh parsley and orange slices.

Notes

  • For a vegetarian version, substitute the meats with additional vegetables like mushrooms, bell peppers, and zucchini, and use vegetable broth instead of chicken broth.
