A refreshing and easy-to-make Fattoush Salad, perfect for any occasion.
Ingredients

- 2 cups romaine lettuce, chopped
- 1 cup mixed greens (arugula, spinach, or spring mix)
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup radishes, thinly sliced
- 1/2 cup bell pepper, diced (any color)
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 large pita bread
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon sumac (optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F. Cut the pita bread into triangles and place them on a baking sheet. Brush with 1 tablespoon of olive oil and sprinkle with salt. Bake for about 8-10 minutes or until golden and crispy. Remove from the oven and let cool.
- In a large bowl, combine the romaine lettuce, mixed greens, cucumber, cherry tomatoes, radishes, bell pepper, red onion, parsley, and mint.
- In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, red wine vinegar, sumac (if using), salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Just before serving, add the crispy pita chips to the salad and toss lightly to incorporate.
Notes
- For added protein, consider adding grilled chicken, chickpeas, or feta cheese to the salad.
- If you prefer a spicier kick, add diced jalapeños or a sprinkle of red pepper flakes to the salad.
