Description

A refreshing and easy-to-make Fattoush Salad, perfect for any occasion.


Ingredients

  • 2 cups romaine lettuce, chopped
  • 1 cup mixed greens (arugula, spinach, or spring mix)
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup radishes, thinly sliced
  • 1/2 cup bell pepper, diced (any color)
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 large pita bread
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon sumac (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F. Cut the pita bread into triangles and place them on a baking sheet. Brush with 1 tablespoon of olive oil and sprinkle with salt. Bake for about 8-10 minutes or until golden and crispy. Remove from the oven and let cool.
  2. In a large bowl, combine the romaine lettuce, mixed greens, cucumber, cherry tomatoes, radishes, bell pepper, red onion, parsley, and mint.
  3. In a small bowl, whisk together the remaining 2 tablespoons of olive oil, lemon juice, red wine vinegar, sumac (if using), salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Just before serving, add the crispy pita chips to the salad and toss lightly to incorporate.

Notes

  • For added protein, consider adding grilled chicken, chickpeas, or feta cheese to the salad.
  • If you prefer a spicier kick, add diced jalapeños or a sprinkle of red pepper flakes to the salad.
