Description
Fattoush is a refreshing salad made with a variety of fresh vegetables and crispy pita chips, perfect for a light meal or side dish.

- 2 cups romaine lettuce, chopped
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 cup radishes, thinly sliced
- 1 cup bell pepper (any color), diced
- 1/2 cup green onions, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 1 teaspoon sumac
- Salt and pepper to taste
- 2 pieces of pita bread
Instructions
- Preheat the oven to 400°F. Cut the pita bread into triangles and place them on a baking sheet. Bake for about 5-7 minutes or until they are crispy and golden brown. Remove from the oven and let cool.
- In a large bowl, combine the chopped romaine lettuce, cucumber, cherry tomatoes, radishes, bell pepper, green onions, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and pepper until well combined.
- Pour the dressing over the salad and toss gently to combine.
- Just before serving, add the crispy pita chips to the salad and toss again to incorporate.
Notes
- For added protein, consider adding grilled chicken or chickpeas to the salad.
- You can substitute the sumac with za’atar for a different flavor profile.
- If you prefer a spicier kick, add some sliced jalapeños or a dash of hot sauce to the dressing.
