Description

Fattoush is a refreshing salad made with a variety of fresh vegetables and crispy pita chips, perfect for a light meal or side dish.


Ingredients

  • 2 cups romaine lettuce, chopped
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup radishes, thinly sliced
  • 1 cup bell pepper (any color), diced
  • 1/2 cup green onions, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon sumac
  • Salt and pepper to taste
  • 2 pieces of pita bread

Instructions

  1. Preheat the oven to 400°F. Cut the pita bread into triangles and place them on a baking sheet. Bake for about 5-7 minutes or until they are crispy and golden brown. Remove from the oven and let cool.
  2. In a large bowl, combine the chopped romaine lettuce, cucumber, cherry tomatoes, radishes, bell pepper, green onions, parsley, and mint.
  3. In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and pepper until well combined.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Just before serving, add the crispy pita chips to the salad and toss again to incorporate.

Notes

  • For added protein, consider adding grilled chicken or chickpeas to the salad.
  • You can substitute the sumac with za’atar for a different flavor profile.
  • If you prefer a spicier kick, add some sliced jalapeños or a dash of hot sauce to the dressing.
