- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1/2 cup warm water (about 110°F)
- 1/4 cup olive oil
- 1 teaspoon active dry yeast
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 small onion, finely chopped
- 1 tablespoon olive oil
- 1/2 teaspoon black pepper
- 1/2 teaspoon sumac (optional)
- 1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine the flour, salt, and sugar. In a separate bowl, mix the warm water and yeast, letting it sit for about 5 minutes until frothy. Add the yeast mixture and olive oil to the flour mixture, stirring until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover and let it rise in a warm place for about 1 hour or until doubled in size.
- While the dough is rising, prepare the filling. In a skillet over medium heat, heat 1 tablespoon of olive oil. Add the chopped onion and sauté until translucent, about 5 minutes. Add the chopped spinach and cook until wilted. Remove from heat and let it cool slightly. Stir in the feta cheese, black pepper, and sumac if using.
- Preheat the oven to 375°F. Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a circle about 6 inches in diameter.
- Place a generous tablespoon of the spinach and feta filling in the center of each circle. Fold the edges over to create a triangle shape, pinching the seams to seal.
- Place the fatayer on a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a golden finish. Bake for 20-25 minutes or until golden brown.
- Let cool slightly before serving. Enjoy warm or at room temperature.

- For a meat variation, substitute the spinach and feta with ground lamb or beef seasoned with spices.
- Add herbs like dill or parsley to the filling for extra flavor.
