  • 1/4 cup green olives, chopped
  • 1/4 cup hard-boiled eggs, chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large bowl, combine the flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the ground beef, cumin, paprika, salt, and pepper. Cook until the beef is browned and cooked through, about 7-10 minutes. Remove from heat and stir in the olives, hard-boiled eggs, and parsley. Let the filling cool.
  3. Preheat the oven to 400°F.
  4. On a floured surface, roll out the dough to about 1/8 inch thick. Cut into 4-5 inch circles.
  5. Place a tablespoon of filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
  6. Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
  7. Bake for 20-25 minutes or until golden brown. Serve warm.
