Instructions
- Preheat your oven to 400°F (200°C).
- Pat the elk tenderloins dry with paper towels and season generously with salt, pepper, garlic powder, and onion powder.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned elk tenderloins and sear for about 3-4 minutes on each side until browned.
- Transfer the skillet to the preheated oven and roast for 10-15 minutes, or until the internal temperature reaches 130°F for medium-rare. Remove from the oven and let rest for 5 minutes.
- While the elk is resting, prepare the huckleberry sauce. In a small saucepan over medium heat, combine the huckleberries, red wine, beef broth, honey, and balsamic vinegar. Bring to a simmer and cook for about 5-7 minutes, stirring occasionally, until the huckleberries have softened.
- If you prefer a thicker sauce, stir in the cornstarch mixture and cook for an additional 2-3 minutes until the sauce has thickened.
- Slice the elk tenderloin into medallions and serve drizzled with the huckleberry sauce. Garnish with fresh thyme if desired.
