Instructions
- Preheat your oven to 400°F and prepare a baking sheet with parchment paper.
- In a food processor, blend together the parsley, walnuts, sesame seeds, ground coriander, ground cumin, salt, black pepper, and cayenne pepper until finely ground and well mixed.
- Create a three-part breading station: place flour in one shallow bowl, beaten eggs in another, and breadcrumbs in a third.
- Coat each chicken thigh in flour, shaking off any extra.
- Dip the floured chicken into the beaten eggs, letting any excess egg drip back into the bowl.
- Roll the chicken in the dukkah mixture, pressing down lightly to ensure it sticks well.
- Arrange the coated chicken thighs on the lined baking sheet and drizzle olive oil generously over each piece.
- Bake for 35-40 minutes, or until the chicken is thoroughly cooked and the skin is golden and crispy, ensuring the internal temperature reaches 165°F.
- Allow the chicken to rest for about 5 minutes before serving.
