Ingredients
Scale
- 1 cup all-purpose flour
- 1/4 cup unsalted butter, softened
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 1/4 cup cold water
- 3 large eggs
- 1/2 cup granulated sugar
- 1 cup whole milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F.
- In a mixing bowl, combine the flour, softened butter, sugar, and salt. Mix until crumbly.
- Gradually add cold water, mixing until a dough forms. Shape the dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
- Roll out the chilled dough on a lightly floured surface to about 1/8 inch thick. Cut out circles that are about 4 inches in diameter.
- Press the circles into a muffin tin to form tart shells.
- In another bowl, whisk together the eggs, sugar, milk, and vanilla extract until smooth.
- Pour the egg mixture into the prepared tart shells, filling each about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the edges are golden and the filling is set.
- Allow to cool slightly before removing from the muffin tin.
- Serve warm or at room temperature.
Notes
- For a richer flavor, add a pinch of nutmeg or cinnamon to the egg mixture.
- You can also substitute half of the milk with coconut milk for a tropical twist.
