- 1 cup rolled oats
- 1/2 cup honey or maple syrup
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a medium mixing bowl, combine the peanut butter, honey (or maple syrup), vanilla extract, and salt. Stir until well blended and smooth.
- Gradually add the rolled oats and powdered sugar to the mixture, stirring until fully incorporated. The mixture should be thick and sticky.
- Using your hands or a cookie scoop, form small balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
- Flatten each ball slightly with the back of a fork to create a crisscross pattern.
- Refrigerate the cookies for at least 30 minutes to firm up before serving.
Notes
- For a chocolate twist, add 1/4 cup of cocoa powder to the mixture.
- You can also substitute almond butter for peanut butter for a different flavor.
- If you prefer a crunchier texture, mix in some chopped nuts or chocolate chips.
