- 1 ½ cups almond flour
- ½ cup unsweetened cocoa powder
- ¼ cup granulated erythritol (or your preferred keto sweetener)
- ½ teaspoon salt
- ½ cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup heavy whipping cream
- 2 tablespoons powdered erythritol (for sweetening whipped cream)
- 1 teaspoon vanilla extract (for whipped cream)
Instructions
- Preheat your oven to 350°F (175°C). In a medium bowl, combine almond flour, cocoa powder, granulated erythritol, and salt. Mix well.
- Pour in the melted butter and vanilla extract, stirring until the mixture resembles wet sand.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form a crust. Bake for 10-12 minutes, then remove from the oven and let cool completely.
- In a large mixing bowl, beat the eggs with an electric mixer on high speed for about 5 minutes, until thick and pale.
- Gradually add in the cocoa powder and erythritol, mixing until well combined.
- Slowly add the melted butter while continuing to beat the mixture until smooth and creamy.
- Pour the filling into the cooled crust and spread evenly. Refrigerate for at least 4 hours or until set.
- In a separate bowl, whip the heavy cream with powdered erythritol and vanilla extract until stiff peaks form.
- Spread the whipped cream over the chilled pie before serving.
Notes
- For a richer flavor, add a teaspoon of instant coffee granules to the filling mixture.
- Top the pie with shaved dark chocolate (sugar-free) or crushed nuts for added texture and flavor.
