- 2 cups almond flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup erythritol (or preferred keto sweetener)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh blackberries
- 1/2 cup shelled pistachios, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a large mixing bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt. Mix well.
- Add the melted butter, egg, and vanilla extract to the dry ingredients. Stir until a thick batter forms.
- Gently fold in the blackberries and chopped pistachios, being careful not to break the blackberries too much.
- Pour the batter into the prepared baking pan and spread it evenly. Drizzle the lemon juice over the top.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for about 10 minutes before lifting out using the parchment paper.
- Allow the bars to cool completely on a wire rack before slicing into squares.
Notes
- For added flavor, consider mixing in a teaspoon of almond extract or a pinch of cinnamon into the batter.
- Substitute blackberries with raspberries or blueberries for a different fruity twist.
