Description

A quick and easy recipe for baked eggs that is low in carbs and perfect for keto diets.


Ingredients

  • 4 large eggs
  • 1/4 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced bell pepper (any color)
  • 1/4 cup diced onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (optional)
  • Cooking spray or butter for greasing

Instructions

  1. Preheat your oven to 375°F.
  2. Grease a 9-inch pie dish or a similar baking dish with cooking spray or butter.
  3. In a mixing bowl, whisk together the eggs and heavy cream until well combined.
  4. Stir in the garlic powder, salt, and black pepper.
  5. Add the diced bell pepper, onion, and half of the shredded cheddar cheese to the egg mixture. Mix until evenly distributed.
  6. Pour the egg mixture into the prepared baking dish.
  7. Sprinkle the remaining cheddar cheese on top.
  8. Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the top is lightly golden.
  9. A toothpick inserted in the center should come out clean.
  10. Remove from the oven and let cool for a few minutes.
  11. Garnish with chopped fresh parsley if desired.
  12. Cut into wedges and serve warm.

Notes

  • For a spicier version, add diced jalapeños or a pinch of cayenne pepper to the egg mixture.
  • You can substitute the cheddar cheese with your favorite cheese, such as feta or mozzarella, for a different flavor profile.
