Ingredients

  • 3 large eggs
  • 1/2 cup milk
  • 1 cup mixed dried fruit (such as raisins, currants, and sultanas)
  • 1/2 cup chopped almonds
  • 1/2 cup candied orange peel, chopped
  • 1/2 cup glacé cherries, halved
  • 1/4 cup slivered almonds (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease and line a 9-inch round cake pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Gradually add the milk, mixing until combined.
  6. Slowly fold in the dry ingredients until just combined.
  7. Gently fold in the mixed dried fruit, chopped almonds, candied orange peel, and glacé cherries until evenly distributed.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Sprinkle the slivered almonds on top of the batter for decoration.
  10. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
