A delicious twist on a classic dish featuring crispy duck confit served over jasmine rice with a flavorful miso sauce.


Ingredients

  • 2 duck legs (about 1.5 pounds total)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup duck fat (or vegetable oil)
  • 1 cup cooked jasmine rice
  • 1/4 cup miso paste (white or yellow)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1/2 cup sliced green onions
  • 1/2 cup shredded carrots
  • 1/2 cup cucumber, thinly sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Preheat your oven to 300°F. Season the duck legs with salt, pepper, garlic powder, and onion powder. Place them in a baking dish, skin side up. Pour the duck fat over the legs, ensuring they are fully submerged. Cover the dish with aluminum foil and bake for 2 to 2.5 hours, until the meat is tender and easily pulls away from the bone.
  2. Once cooked, remove the duck legs from the fat and let them cool slightly. Increase the oven temperature to 425°F. Place the duck legs skin side up on a baking sheet and roast for 15-20 minutes, or until the skin is crispy and golden brown.
  3. While the duck is roasting, prepare the miso sauce. In a small bowl, whisk together the miso paste, soy sauce, rice vinegar, and honey until smooth.
  4. To assemble the bowls, divide the cooked jasmine rice among four bowls. Top each bowl with a crispy duck leg, then drizzle with the miso sauce.
  5. Garnish with sliced green onions, shredded carrots, cucumber, and a sprinkle of sesame seeds. Serve immediately.

Notes

  • For a lighter option, substitute the duck with shredded rotisserie chicken.
