Description

A delicious and nutritious spiced lentil dhal curry, perfect for a comforting meal.


Ingredients

  • 1 cup red lentils, rinsed and drained
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, grated
  • 1 medium tomato, diced
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder (adjust to taste)
  • 3 cups vegetable broth or water
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and sauté for about 30 seconds until fragrant.
  2. Add the chopped onion and cook until it becomes translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  3. Add the diced tomato, turmeric powder, coriander powder, chili powder, and salt. Cook for about 5 minutes, stirring occasionally, until the tomatoes break down and the mixture thickens.
  4. Stir in the rinsed lentils and vegetable broth. Bring to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the lentils are tender and the mixture is thickened.
  5. Once the lentils are cooked, stir in the garam masala and adjust seasoning if necessary. If the dhal is too thick, add a little more broth or water to reach your desired consistency.
  6. Serve hot, garnished with fresh cilantro if desired. Enjoy with rice or naan.

Notes

  • For a creamier texture, stir in a splash of coconut milk just before serving.
