  • 16 ounces cream cheese, softened
  • 1/2 cup granulated erythritol (or preferred keto sweetener)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan with cooking spray or butter.
  2. In a large mixing bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt. Stir until well mixed.
  3. Add melted butter, eggs, vanilla extract, and red food coloring to the dry ingredients. Mix until a smooth batter forms.
  4. Pour the red velvet batter into the prepared springform pan and spread it evenly.
  5. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let it cool completely in the pan.
  6. While the cake cools, prepare the cheesecake layer by beating the softened cream cheese and erythritol until smooth and creamy.
  7. Add eggs, vanilla extract, and lemon juice to the cream cheese mixture. Mix until well combined.
