Ingredients

  • 2 cups all-purpose flour
  • 1 cup semolina
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup vegetable oil
  • 1/2 cup powdered sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup warm water
  • 1 1/2 cups pitted dates, chopped
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup chopped walnuts (optional)
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the all-purpose flour, semolina, baking powder, and salt. Mix well.
  3. In another bowl, cream together the softened butter, vegetable oil, and powdered sugar until light and fluffy.
  4. Gradually add the flour mixture to the butter mixture, mixing until crumbly. Slowly add warm water, a little at a time, until the dough comes together. It should be soft but not sticky.
  5. In a small bowl, combine the chopped dates, ground cinnamon, ground nutmeg, and walnuts (if using). Mix until well combined.
  6. Take a small piece of dough (about the size of a golf ball) and flatten it in your palm. Place a teaspoon of the date mixture in the center and fold the dough over to enclose the filling. Roll it into a ball and then shape it into a dome.
  7. Place the shaped maamoul on the prepared baking sheet. Repeat with the remaining dough and filling.
  8. Bake in the preheated oven for 15-20 minutes, or until the bottoms are lightly golden. Do not overbake.
  9. Allow the maamoul to cool slightly before dusting with powdered sugar. Serve warm or at room temperature.

Notes

  • For a richer flavor, try adding a teaspoon of vanilla extract to the dough.
  • You can also experiment with different fillings, such as figs or pistachios, for a unique twist on the traditional date filling.
