- 2 cups all-purpose flour
- 1 cup semolina
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/4 cup vegetable oil
- 1/2 cup powdered sugar
- 1/2 teaspoon ground cinnamon
- 1/2 cup warm water
- 1 1/2 cups pitted dates, chopped
- 1/4 teaspoon ground nutmeg
- 1/4 cup chopped walnuts (optional)
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the all-purpose flour, semolina, baking powder, and salt. Mix well.
- In another bowl, cream together the softened butter, vegetable oil, and powdered sugar until light and fluffy.
- Gradually add the flour mixture to the butter mixture, mixing until crumbly. Slowly add warm water, a little at a time, until the dough comes together. It should be soft but not sticky.
- In a small bowl, combine the chopped dates, ground cinnamon, ground nutmeg, and walnuts (if using). Mix until well combined.
- Take a small piece of dough (about the size of a golf ball) and flatten it in your palm. Place a teaspoon of the date mixture in the center and fold the dough over to enclose the filling. Roll it into a ball and then shape it into a dome.
- Place the shaped maamoul on the prepared baking sheet. Repeat with the remaining dough and filling.
- Bake in the preheated oven for 15-20 minutes, or until the bottoms are lightly golden. Do not overbake.
- Allow the maamoul to cool slightly before dusting with powdered sugar. Serve warm or at room temperature.
Notes
- For a richer flavor, try adding a teaspoon of vanilla extract to the dough.
- You can also experiment with different fillings, such as figs or pistachios, for a unique twist on the traditional date filling.
