Discover the secret to flaky perfection with these homemade croissants.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 cup whole milk, warmed (about 110°F)
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon active dry yeast
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup water, cold
  • 1 large egg, for egg wash

Instructions

  1. In a small bowl, combine the warm milk, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, whisk together the flour and salt. Add the yeast mixture and cold water to the flour mixture. Stir until a dough forms.
  3. Knead the dough on a lightly floured surface for about 5 minutes until smooth. Shape it into a ball, place it in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.
  4. Once the dough has risen, roll it out into a rectangle about 1/4 inch thick. Place the cold, cubed butter in the center of the dough. Fold the dough over the butter to encase it completely.
  5. Roll the dough out again into a rectangle, then fold it into thirds like a letter. Wrap in plastic wrap and refrigerate for 30 minutes.
  6. Repeat the rolling and folding process two more times, chilling for 30 minutes between each fold.
  7. After the final fold, roll the dough out to about 1/4 inch thick and cut it into triangles.
  8. Starting from the wide end, roll each triangle tightly into a crescent shape. Place the croissants on a baking sheet lined with parchment paper. Cover and let them rise for another 30-45 minutes until puffy.
  9. Preheat the oven to 400°F. Brush the croissants with a beaten egg for a golden finish.
  10. Bake for 15-20 minutes or until golden brown and flaky. Let cool slightly before serving.

Notes

  • For a sweeter croissant, add a tablespoon of vanilla extract to the dough.
  • To make chocolate croissants, place a few chocolate chips on the wide end of each triangle before rolling.
