Description

A delicious and crispy pork belly served with sautéed bok choy and a spicy chili oil drizzle.


Ingredients

  • 2 pounds pork belly, skin scored
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 4 cups bok choy, chopped
  • 2 tablespoons fresh ginger, minced
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons chili oil
  • 2 teaspoons sesame seeds
  • 2 green onions, sliced for garnish

Instructions

  1. Preheat your oven to 450°F.
  2. Pat the pork belly dry with paper towels and rub the salt and black pepper all over, focusing on the scored skin.
  3. Place the pork belly on a roasting rack in a baking dish and roast for 30 minutes.
  4. Reduce the temperature to 300°F and continue roasting for an additional 1 hour, or until the skin is crispy and the meat is tender.
  5. While the pork belly is roasting, heat the vegetable oil and sesame oil in a large skillet over medium heat.
  6. Add the minced ginger and garlic, sautéing for about 1 minute until fragrant.
  7. Add the chopped bok choy to the skillet and stir-fry for 3-4 minutes until wilted.
  8. Drizzle with soy sauce and rice vinegar, stirring to combine, then remove from heat and set aside.
  9. Once the pork belly is done, let it rest for 10 minutes before slicing.
  10. Serve the crispy pork belly over the sautéed bok choy, drizzling with chili oil and sprinkling with sesame seeds. Garnish with sliced green onions.

Notes

  • For extra crunch, finish the pork belly under the broiler for 2-3 minutes after roasting.
  • If you prefer a milder dish, reduce the amount of chili oil or serve it on the side for dipping.
  • You can substitute bok choy with spinach or kale for a different green.
