  • 2 large yellow onions, sliced into 1/4-inch rings
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup buttermilk
  • 1 cup breadcrumbs (preferably panko)
  • Vegetable oil, for frying

Instructions

  1. Peel the onions and slice them into 1/4-inch thick rings. Separate the rings and set them aside in a bowl.
  2. In a separate bowl, whisk together the flour, baking powder, garlic powder, paprika, salt, and black pepper.
  3. Pour the buttermilk into another bowl.
  4. Dip each onion ring first into the buttermilk, allowing excess to drip off, then coat it in the flour mixture. Shake off any excess flour.
  5. Return the coated onion ring to the buttermilk, then dredge it in the breadcrumbs, pressing gently to adhere.
  6. Heat about 2 inches of vegetable oil in a deep skillet or pot over medium-high heat until it reaches 350°F.
  7. Fry the onion rings in batches, being careful not to overcrowd the pan, for about 2-3 minutes on each side or until golden brown and crispy.
  8. Remove the onion rings with a slotted spoon and drain on paper towels.
  9. Serve hot with your favorite dipping sauce.
