Cranachan is a traditional Scottish dessert that combines fresh raspberries, creamy yogurt, and toasted oats, creating a delightful and indulgent treat.

- 2 cups fresh raspberries
- 1 cup rolled oats
- 1 cup heavy cream
- 1/2 cup Greek yogurt
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 2 tablespoons whiskey (optional)
- Fresh mint leaves for garnish
Instructions
- Preheat the oven to 350°F. Spread the rolled oats on a baking sheet and toast them in the oven for about 10 minutes, or until golden brown. Stir occasionally to prevent burning. Remove from the oven and let cool.
- In a large mixing bowl, combine the heavy cream, Greek yogurt, honey, vanilla extract, and whiskey (if using). Whip the mixture until soft peaks form.
- Gently fold in the toasted oats and half of the fresh raspberries into the whipped cream mixture, being careful not to deflate the cream.
- In serving glasses or bowls, layer the remaining raspberries and the oat-cream mixture. Start with a layer of raspberries, followed by the cream mixture, and repeat until the glasses are filled.
- Chill the cranachan in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
- Garnish with fresh mint leaves before serving.
Notes
- For added texture, mix in some chopped nuts, such as almonds or hazelnuts.
- Substitute maple syrup for honey for a different flavor profile.
