Description

Crispy Chicken Coxinha is a popular Brazilian snack made with shredded chicken and a dough that is shaped into teardrops and fried until golden brown.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup cream cheese
  • 2 cups all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup milk
  • 1 large egg
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions

  1. In a skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the shredded chicken, paprika, salt, and black pepper, cooking for another 2-3 minutes.
  4. Remove from heat and mix in the cream cheese until well combined. Let the filling cool.
  5. In a saucepan, bring the chicken broth and milk to a boil.
  6. Gradually add the flour, stirring continuously until a dough forms.
  7. Cook for about 2-3 minutes until the dough pulls away from the sides of the pan.
  8. Remove from heat and let it cool slightly.
  9. Once the dough is cool enough to handle, take a small piece (about the size of a golf ball) and flatten it in your hand.
  10. Place a spoonful of the chicken filling in the center and fold the dough over to form a teardrop shape, sealing the edges well.
  11. Repeat with the remaining dough and filling.
  12. Set up a breading station with the beaten egg in one bowl and breadcrumbs in another.
  13. Dip each coxinha in the egg, then coat with breadcrumbs.
  14. In a deep skillet or fryer, heat vegetable oil to 350°F.
  15. Fry the coxinhas in batches until golden brown, about 4-5 minutes.
  16. Drain on paper towels before serving.

Notes

  • For a spicier version, add chopped jalapeños or hot sauce to the chicken filling.
  • You can also substitute the chicken with shredded cheese for a vegetarian option.
