- 2 ribeye steaks (about 1 inch thick, 12–16 ounces each)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 tablespoon minced garlic
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh dill, chopped
- 1 teaspoon smoked paprika
- 1 teaspoon Worcestershire sauce
- 1 teaspoon lemon juice
Instructions
- Remove the steaks from the refrigerator and let them sit at room temperature for about 30 minutes.
- Preheat your grill or skillet over medium-high heat. If using a skillet, add the olive oil and heat until shimmering.
- Season both sides of the steaks generously with salt and pepper.
- Place the steaks on the grill or in the skillet and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached.
- While the steaks are cooking, prepare the cowboy butter by mixing together the butter, minced garlic, parsley, chives, dill, smoked paprika, Worcestershire sauce, and lemon juice in a small bowl.
- Once the steaks are cooked to your liking, remove them from the heat and let them rest for 5-10 minutes.
- Top each steak with a generous dollop of cowboy butter before serving.
