Ingredients

  • 2 ribeye steaks (about 1 inch thick, 1216 ounces each)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon lemon juice

Instructions

  1. Remove the steaks from the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook more evenly.
  2. Preheat your grill or skillet over medium-high heat. If using a skillet, add the olive oil and heat until shimmering.
  3. Season both sides of the steaks generously with salt and pepper.
  4. Place the steaks on the grill or in the skillet and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Use a meat thermometer for accuracy (130°F for medium-rare).
  5. While the steaks are cooking, prepare the cowboy butter. In a small bowl, mix together the butter, minced garlic, parsley, chives, dill, smoked paprika, Worcestershire sauce, and lemon juice until well combined.
  6. Once the steaks are cooked to your liking, remove them from the heat and let them rest for 5-10 minutes.
