Description
Cottage Cheese Tuna Cakes are a simple and tasty delight, perfect for a quick meal or snack.
Ingredients
Scale
- 1 can (5 ounces) tuna, drained
- 1 cup cottage cheese
- 1/2 cup breadcrumbs
- 1/4 cup chopped green onions
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
Instructions
- In a large bowl, combine the drained tuna, cottage cheese, breadcrumbs, green onions, Parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Shape the mixture into patties, about 2-3 inches in diameter.
- Heat the olive oil in a large skillet over medium heat. Once hot, add the tuna cakes in batches, being careful not to overcrowd the pan.
- Cook for about 4-5 minutes on each side, or until golden brown and heated through. Remove from the skillet and drain on paper towels.
- Serve warm with your favorite dipping sauce or a squeeze of lemon juice.
Notes
- For added flavor, mix in chopped herbs like parsley or dill into the tuna mixture.
- Substitute the breadcrumbs with crushed cornflakes or panko for a crunchier texture.
