Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup walnuts, chopped
  • For the frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ¼ cup brewed coffee, cooled
  • 1 teaspoon vanilla extract
  • Chopped walnuts for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the brewed coffee. Mix until just combined.
  6. Fold in the chopped walnuts gently.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, brewed coffee, and vanilla extract, mixing until smooth and fluffy.
  11. Once the cakes are completely cooled, place one layer on a serving plate and spread a layer of frosting on top. Place the second layer on top and frost the top and sides of the cake.
  12. Garnish with chopped walnuts on top of the frosting.

Notes

  • For a richer flavor, use espresso instead of regular brewed coffee.
  • Add chocolate chips to the batter for a mocha twist.
