A creamy and tropical dessert made with coconut milk and fresh mango, perfect for any occasion.

- 1 cup coconut milk
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 tablespoon unflavored gelatin
- 1/4 cup cold water
- 1 teaspoon vanilla extract
- 1 ripe mango, peeled and diced
- Fresh mint leaves for garnish (optional)
Instructions
- In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
- In a saucepan, combine the coconut milk, heavy cream, and sugar. Heat over medium heat, stirring until the sugar dissolves and the mixture is warm but not boiling.
- Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved. Add the vanilla extract and mix well.
- Pour the mixture into individual serving cups or ramekins. Refrigerate for at least 4 hours or until set.
- Once the panna cotta is set, top each serving with diced mango. Garnish with fresh mint leaves if desired.
Notes
- For a tropical twist, add a splash of lime juice to the coconut mixture before pouring it into the cups.
- Substitute the mango with other fruits like passion fruit or berries for different flavor profiles.
