Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup coconut milk
  • 1 1/2 cups shredded sweetened coconut
  • For the frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1 cup shredded sweetened coconut (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the flour mixture to the butter mixture, alternating with the coconut milk. Begin and end with the flour mixture. Mix until just combined.
  6. Fold in the shredded coconut until evenly distributed.
  7. Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, mixing well. Add the coconut milk and vanilla extract, and beat until smooth and fluffy.
  10. Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top, then add the second layer and repeat. Place the third layer on top and frost the top and sides of the cake.
  11. Press the shredded coconut onto the sides and top of the cake for garnish.
  12. Chill the cake for at least 30 minutes before serving to set the frosting.

Notes

  • For a tropical twist, add 1/2 cup of crushed pineapple to the batter for added flavor and moisture.
  • Substitute half of the all-purpose flour with coconut flour for a denser, more coconut-flavored cake.
