Ingredients

  • 1 cup water
  • 1/2 cup sugar
  • 2 teaspoons agar-agar powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Fresh fruit (like mango or pineapple) for garnish (optional)

Instructions

  1. In a medium saucepan, combine the coconut milk, water, sugar, and salt. Stir well to dissolve the sugar.
  2. Sprinkle the agar-agar powder over the mixture and let it sit for about 5 minutes to hydrate.
  3. Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring constantly. Once boiling, reduce the heat and simmer for 2-3 minutes until the agar-agar is completely dissolved.
  4. Remove from heat and stir in the vanilla extract.
  5. Pour the mixture into a mold or individual serving cups. Allow it to cool to room temperature, then refrigerate for at least 2 hours or until set.
  6. Once set, carefully remove the jelly from the mold or serve directly in the cups. Garnish with fresh fruit if desired.
