- 2 cans (13.5 oz each) full-fat coconut milk
- 3/4 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1/2 cup shredded unsweetened coconut (optional)
Instructions
- In a medium saucepan, combine the coconut milk, sugar, vanilla extract, and salt. Heat over medium heat, stirring frequently, until the sugar is fully dissolved. Do not let it boil.
- Remove the saucepan from heat and let the mixture cool to room temperature.
- Once cooled, stir in the shredded coconut if using.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
- Before serving, let the ice cream sit at room temperature for a few minutes to soften slightly for easier scooping.
Notes
- For a chocolate twist, add 1/4 cup of unsweetened cocoa powder to the mixture before heating.
- To make it a tropical treat, mix in diced pineapple or mango during the last few minutes of churning.
