Delicious and easy-to-make coconut flour dinner rolls that are perfect for any meal.


Ingredients

  • 2 cups coconut flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 4 large eggs
  • 1/2 cup unsweetened coconut milk
  • 1/4 cup melted coconut oil
  • 1 tablespoon honey (optional)
  • 1 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the coconut flour, baking powder, and salt. Whisk together until well mixed.
  3. In a separate bowl, beat the eggs and then add the coconut milk, melted coconut oil, and honey (if using). Mix until fully combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. If using garlic powder, fold it in at this stage.
  5. Allow the dough to rest for about 5 minutes to thicken.
  6. Using your hands, form the dough into small balls (about the size of a golf ball) and place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let cool for a few minutes before serving.

Notes

  • For a cheesy flavor, add 1/2 cup of shredded cheese to the dough before baking.
  • To enhance sweetness, substitute honey with maple syrup or add a sprinkle of cinnamon to the dough.
