- 2 cups coconut flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 4 large eggs
- 1/2 cup unsweetened coconut milk
- 1/4 cup melted coconut oil
- 1 tablespoon honey (optional)
- 1 teaspoon garlic powder (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the coconut flour, baking powder, and salt. Whisk together until well mixed.
- In a separate bowl, beat the eggs and then add the coconut milk, melted coconut oil, and honey (if using). Mix until fully combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. If using garlic powder, fold it in at this stage.
- Allow the dough to rest for about 5 minutes to thicken.
- Using your hands, form the dough into small balls (about the size of a golf ball) and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For a cheesy flavor, add 1/2 cup of shredded cheese to the dough before baking.
- To enhance sweetness, substitute honey with maple syrup or add a sprinkle of cinnamon to the dough.
