Ingredients

  • 1/4 teaspoon cream of tartar
  • 3 tablespoons softened cream cheese
  • 1 tablespoon almond flour
  • 1 tablespoon nutritional yeast (optional)
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 300°F (150°C) and prepare a baking sheet with parchment paper.
  2. In a large bowl, separate the egg whites from the yolks, placing the whites in a mixing bowl.
  3. Add the cream of tartar to the egg whites and whip on high speed until stiff peaks form, about 3-5 minutes.
  4. In a separate bowl, whisk together the egg yolks, softened cream cheese, almond flour, nutritional yeast (if using), garlic powder (if using), and salt until smooth and creamy.
  5. Gently fold the whipped egg whites into the yolk mixture in three parts to maintain the airy texture.
  6. Scoop the mixture onto the prepared baking sheet, creating 6-8 rounded dollops.
  7. Bake in the oven for 25-30 minutes, or until the tops are golden brown and the buns feel firm to the touch.
  8. Let the sky buns cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
