Description
Clafoutis is a delightful French dessert made with fresh or frozen cherries baked in a custard-like batter.

- 3 cups pitted cherries (fresh or frozen)
- 1 cup whole milk
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter (melted)
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round pie dish or a similar-sized baking dish with butter.
- Spread the pitted cherries evenly in the bottom of the prepared dish.
- In a mixing bowl, whisk together the milk, eggs, granulated sugar, vanilla extract, almond extract, flour, and salt until smooth and well combined.
- Pour the batter over the cherries in the baking dish. Drizzle the melted butter on top.
- Bake in the preheated oven for 35-40 minutes, or until the clafoutis is puffed and golden brown around the edges. A toothpick inserted in the center should come out clean.
- Allow to cool for about 10 minutes before dusting with powdered sugar. Serve warm or at room temperature.
Notes
- For a different flavor, try substituting the cherries with blueberries or sliced peaches.
- Add a pinch of cinnamon or nutmeg to the batter for a warm spice note.
