  • 1/2 cup almond flour
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon sweetener (like erythritol or your choice)
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter, melted
  • For the cream cheese icing:
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sweetener
  • 1 tablespoon heavy cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your waffle maker according to the manufacturer’s instructions.
  2. In a mixing bowl, combine the mozzarella cheese, almond flour, eggs, baking powder, cinnamon, salt, sweetener, vanilla extract, and melted butter. Mix until well combined.
  3. Spray the waffle maker with non-stick cooking spray.
  4. Pour half of the batter into the preheated waffle maker and close the lid.
  5. Cook for about 3-5 minutes or until the chaffle is golden brown and crispy.
  6. Carefully remove the chaffle and repeat with the remaining batter.
  7. While the chaffles are cooking, prepare the cream cheese icing by mixing the softened cream cheese, powdered sweetener, heavy cream, and vanilla extract in a bowl until smooth and creamy.
  8. Serve the chaffles warm, drizzled with the cream cheese icing.
