Ingredients

- 2 cups whole wheat flour
- 1 cup rolled oats
- 1/2 cup ground flaxseed
- 1/2 cup pitted dates, chopped
- 1/4 cup honey
- 1/4 cup unsweetened applesauce
- 1 cup warm water (about 110°F)
- 2 teaspoons active dry yeast
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 1 tablespoon olive oil
Instructions
- In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, combine whole wheat flour, rolled oats, ground flaxseed, cinnamon, nutmeg, and salt. Mix well.
- Add the chopped dates, honey, applesauce, and olive oil to the dry ingredients. Pour in the yeast mixture.
- Stir until a dough forms. If the dough is too sticky, add a little more flour, one tablespoon at a time.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
- Preheat the oven to 350°F.
- Punch down the risen dough and divide it into 12 equal pieces. Shape each piece into a roll and place them on a greased baking sheet.
- Cover the rolls with a towel and let them rise for another 30 minutes.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
Notes
- For a sweeter roll, add a tablespoon of brown sugar to the dough mixture.
- Substitute chopped nuts or seeds for some of the dates for added crunch and flavor.
