Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream
  • ½ teaspoon ground cinnamon (for topping)
  • 2 tablespoons granulated sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, 2 tablespoons of sugar, and 1 teaspoon of cinnamon. Mix until well combined. Press the mixture firmly into the bottom of the prepared baking pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Add 1 cup of sugar and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing well after each addition. Finally, mix in the sour cream until smooth and creamy.
  4. Pour the cheesecake mixture over the crust in the baking pan, spreading it evenly. Bake in the preheated oven for 40-45 minutes, or until the edges are set and the center is slightly jiggly.
  5. Remove from the oven and let it cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours to set.
  6. While the cheesecake is chilling, prepare the topping by mixing ½ teaspoon of cinnamon and 2 tablespoons of sugar in a small bowl. Once the cheesecake is chilled and set, sprinkle the cinnamon-sugar mixture evenly over the top.
