Churro Cheesecake Bars are a delicious dessert that combines the flavors of churros and cheesecake, making them a sweet treat you can’t resist!


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup sour cream
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, 1/4 cup sugar, and 1 teaspoon cinnamon. Mix until well combined. Press the mixture firmly into the bottom of the prepared baking dish to form the crust. Bake for 10 minutes, then remove from the oven and let cool slightly.
  3. In a large mixing bowl, beat the softened cream cheese with 1 cup sugar until smooth and creamy. Add the vanilla extract and mix until combined.
  4. Add the eggs one at a time, mixing well after each addition. Then, mix in the sour cream, flour, and salt until just combined. Do not overmix.
  5. Pour the cheesecake batter over the cooled crust, spreading it evenly. Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake in the oven for an additional 30 minutes to cool gradually.
  6. While the cheesecake cools, mix together 1/4 cup sugar and 1 teaspoon cinnamon in a small bowl. Once the cheesecake has cooled, sprinkle the cinnamon-sugar mixture evenly over the top.
  7. Refrigerate the cheesecake bars for at least 4 hours, or overnight for best results. Once chilled, cut into squares and serve.

Notes

  • For a richer flavor, try adding a tablespoon of caramel sauce on top before serving.
  • You can also substitute the graham cracker crust with a chocolate cookie crust for a different twist.
