Description
Choripán is a traditional Argentine sandwich made with grilled chorizo sausage served in a crusty roll, topped with chimichurri sauce and grilled vegetables.

- 1 pound chorizo sausage, casings removed
- 4 crusty rolls (such as bolillo or baguette)
- 1 cup chimichurri sauce (store-bought or homemade)
- 1 medium onion, sliced
- 1 medium tomato, sliced
- Salt and pepper to taste
- Olive oil for grilling
Instructions
- Preheat your grill or grill pan over medium heat.
- In a bowl, mix the sliced onion with a drizzle of olive oil, salt, and pepper. Set aside.
- Form the chorizo into four equal patties.
- Grill the chorizo patties for about 5-7 minutes on each side, or until cooked through and nicely browned.
- While the chorizo is grilling, place the onion slices on the grill and cook for about 3-4 minutes, until they are tender and have grill marks.
- Slice the rolls open and lightly toast them on the grill for 1-2 minutes.
- Assemble each choripán by placing a grilled chorizo patty in the toasted roll, topping it with grilled onions, tomato slices, and a generous spoonful of chimichurri sauce.
- Serve immediately while hot.
Notes
- For a spicier kick, add sliced jalapeños or a dash of hot sauce to the chimichurri.
- Try using different types of sausage, such as spicy Italian or smoked sausage, for a unique flavor twist.
