Description
Chole Bhature is a flavorful and comforting dish made with spiced chickpeas served with deep-fried bread.
Ingredients

- 2 cups dried chickpeas (garbanzo beans), soaked overnight
- 1 medium onion, finely chopped
- 2 medium tomatoes, pureed
- 2 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 2 teaspoons cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- Salt to taste
- 3 tablespoons vegetable oil
- Fresh cilantro, chopped (for garnish)
- 4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon yogurt
- Water (as needed)
- Oil for deep frying
Instructions
- Drain and rinse the soaked chickpeas. In a large pot, add the chickpeas and enough water to cover them. Bring to a boil, then reduce heat and simmer until tender, about 1 to 1.5 hours. Alternatively, use a pressure cooker for faster cooking (about 15-20 minutes under pressure).
- In a large skillet, heat the vegetable oil over medium heat. Add cumin seeds and let them sizzle. Then, add the chopped onions and sauté until golden brown.
- Stir in the ginger-garlic paste and green chilies, cooking for another minute until fragrant. Add the pureed tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the oil separates from the mixture, about 5-7 minutes.
- Add the cooked chickpeas to the skillet along with 1 cup of the cooking liquid. Stir in garam masala and simmer for 10-15 minutes, allowing the flavors to meld. Adjust seasoning if necessary.
- For the bhature, in a large bowl, combine all-purpose flour, baking powder, and salt. Add yogurt and mix well. Gradually add water, kneading to form a soft dough. Cover and let it rest for at least 30 minutes.
- Heat oil in a deep frying pan over medium heat. Divide the dough into equal portions and roll each into a ball. Roll out each ball into a circle about 6 inches in diameter.
- Fry each bhature in hot oil until puffed and golden brown, about 1-2 minutes per side. Remove and drain on paper towels.
- Serve the chole hot, garnished with chopped cilantro, alongside the bhature.
Notes
- For a spicier chole, add more green chilies or a pinch of cayenne pepper.
- You can substitute half of the all-purpose flour with whole wheat flour for a healthier version of bhature.
